Discovering Bossam: A Korean Culinary Delight

Bossam(보쌈), a traditional Korean dish, is a savory feast celebrated for its tender slices of boiled pork, typically pork shoulder, accompanied by an array of vibrant side dishes. The pork is gently boiled in a rich broth infused with spices such as ginger, garlic, and star anise, which elevates the flavor profile. Once prepared, the meat is thinly sliced and served with a colorful assortment of accompaniments including sliced raw garlic, spicy radish salad, kimchi, and fresh vegetables like lettuce and perilla leaves. The essence of bossam lies in its communal style of eating, where diners wrap slices of pork and sides in the crisp vegetables, creating a delicious and interactive dining experience.

The Historical Background of Bossam

Bossam’s historical roots are interwoven with Korean culture, particularly during the ‘gimjang’ season when large quantities of kimchi are prepared for winter. To honor the laborers engaged in this time-consuming process, the yangban (the noble class of the Joseon era) would provide a pig for a celebratory feast. This linkage to labor and reward transformed bossam into a symbol of camaraderie and tradition. After cooling, it is sliced to perfection and presented with various side dishes. Bossam can also be elevated by the addition of fresh raw oysters, creating a delightful twist known as gul-bossam.
